Our Story

Butter deserved
its own address.

Otsego County has been dairy country since before anyone thought to write it down. The cream here is extraordinary. And for some reason, nobody ever gave it the one thing it earned — a shop of its own.

So we took a little building on Main Street in Laurens — a town most people drive through on their way to Cooperstown — and turned it into what we think is the only whipped butter shop in New York State. We whip in small batches. We pull warm rolls out of the oven all morning, because butter this good shouldn't have to wait for you to get home.

It's small. It smells unbelievable. It's a club, and everyone's invited.

First Light — unsalted. Nothing but butter and air. Dawn — salted, finished with flaky Syracuse salt. Daybreak — sweetened with local honey and bee pollen. Every butter we make is named for a kind of light — and more are coming; the Club tastes them first and votes on what's next.
